Breakfast: Eggs and Grits

Grits and Eggs

I love grits.  I was raised in Texas, what can I say?  They are made from corn, so no worries about gluten.  And they are relatively fast and easy to make.  You can also pack it all up in a pyrex or other non-plastic food storage option and send it off to work or school, no problem.  Add an egg and you get protein too, which is so important to hard-working brains.

Grits:
Buy either Alber's Quick Grits or Bob’s Red Mill Corn Grits/Polenta (yes, they are the same, but don't use quick grits for your Polenta recipe), and follow the directions on the package for ratio of water/grits/salt.  I suggest Alber's Quick Grits for quick morning breakfasts.  If you are making this as part of a fancy brunch and you are looking to impress your non-Southern guests, you may want to use Polenta.  It will likely be creamier.  Just don’t believe Bob’s Red Mill when they say you can add brown sugar and milk.  This is not oatmeal or cream of wheat people, it’s grits.  And grits are savory.  Period.  You could maybe make a creative dessert… but I’m not yet Cat Cora.

Directions:
1.      Bring the required amount of water with salt to boil.
2.      Stir in grits, reduce heat to medium or simmer.  Don’t let it clump together.  The quick grits especially need attention to keep from clumping, especially right as your pour them in. 
3.      When the water is absorbed and the consistency is still creamy, they’re done.  About 5 minutes.
4.      Serve it up, add toppings to your liking.

Toppings:
·         1-2 fried eggs, however you like ‘em.  I like them over medium so I can mix the runny yolk into the grits.  Yum.
·         If you don’t add eggs, add butter.  In fact, you can add nothing but butter and salt and they are delicious.  Butter is also naturally lactose free, as lactose is the sugar in milk and butter is the fat.  The yummy delicious fat that is good for your brain.
·         Diced tomatoes (not canned)
·         Cheese (I go for aged cheddar, over 9 months old = no lactose = happy me!)
·         Salt and pepper to taste
·         Tabasco Sauce, we like the green one.
·         Whatever else you like!
